Absolutely Delicious Pastry!  You can't even tell the gluten is missing!  It is light & airy with a crisp pastry outside & wonderful apricot center!  It is difficult to eat just one.

these were very tasty.  The ratio  of apricot filling to pastry crust was just right. the pastry is sort of like slightly sweet pie crust. I wish they were a bit more moist as the cookie tends to crumble when you bite into it. Will order again.
